What You Need:
5-6 overripe bananas
Honey/Agave or Maple Syrup (2 Tbsp)
Almond, Cashew, or Peanut Butter (about a 1/2 cup)
Old Fashioned Oats (Gluten-free)
Cinnamon, Nutmeg, Ginger (Apple Pie or Pumpkin Pie Spice) (1 Tbsp)
Baking Soda (1tsp)
Baking Powder (1tsp)
Walnuts/pecans/or other nuts
What To Do:
Preheat oven to 400.
I use my kitchen-aid mixer but a bowl will work just fine. Mash the bananas in a bowl and add the nut butter, honey or syrup, 2 eggs, seasonings, baking soda and powder. Now, slowly add in the oats until you have a thick consistency, add your nuts (optional) and mix thoroughly. Spray your bread pan with oil and put your bread mixture into the pan. Bake for 30 minutes or until a toothpick inserted in the center comes out clean. Let cool on the counter. Once cool, cut into slices and serve.
Gift Tip: If you have a small loaf pan, these make adorable additions to holiday gifts. Before baking, add your favorite granola or toppings to the top of the bread so that when it bakes, you have a colorful or interesting top crust. Package in cellophane bags or wrap with a cute ribbon. These also make great favors to parties or cute breakfast items for co-workers.
