What You Need:
Pasta Sauce of your choice
Meat of your choice – I used cubed steak about ½ lb
Red Pepper Flakes
Large Shells – can substitute zucchini strips
What You Do:
Preheat oven to 350.
I usually have quite a large stock of homemade sauce (link to foraging Fridays post) but you can use your favorite sauce. If I am buying sauce from a store, I always check the labels – no added sugar and no ingredients that I can’t pronounce. When I make my own sauce, I have complete control over what is going to be put on my food and in my body.
Bring water to a boil, cook shells for 8 minutes (al dente) and then run under cold water. If you are using zucchini, slice it into small strips and put aside until stuffing and use those in place of shells.
Using a sauté pan, cook the meat thoroughly. I used cubed steak in my recipe, but I also really like Italian sausage for this recipe. Just make sure whatever meat you decide to use is ground meat. Let cool.
In a bowl, microwave spinach so that it is soft but not so long that it is mushy – about 45 seconds. In a bowl, mix the ricotta and parmesan cheese, two eggs, spices, spinach, and cooled meat.
Stuff shells with your mixture, fold and line your pan with the stuffed shells. Top off with your favorite sauce and bake on 350 for 15 minutes.
The recipe above is good for half of a standard large shell box. A serving size for about 4 people.
