What you need:
Bag of Cauliflower Gnocchi – Trader Joe’s Freezer Aisle
About a cup of basil
Two to three garlic cloves
Two to three tablespoons of pine nuts
Four or Five sun-dried tomatoes
Pinch of Salt
Extra Virgin Olive Oil
Whole30 compliant Sausage – I used a jalapeño chicken sausage from Trader Joe’s
What to do:
This recipe is so easy and perfect for those looking for a quick and easy Whole30 compliant dinner. All of this can be modified, keep in mind that I don’t measure things out, cooking is about going with the flow. It is about tasting as you go and being creative.
In a blender or food processor, add the basil, garlic cloves, pine nuts, and salt. Begin blending and slowly add the olive oil, then add in the sundried tomatoes (if you so choose). Blend until preferred consistency.
Cook the sausage of your choosing. Once it is cooked, slice it up into small pieces and put aside.
Prepare the gnocchi, I prefer the sauté method, browning the gnocchi a little before adding in the pesto. Once the gnocchi is browned or cooked to your liking, begin by adding two tablespoons of the pesto. Mix in sausage and add more pesto until the preferred amount has been mixed into the gnocchi.
Serve immediately and enjoy your delicious meal!
